A three-starred chef Enrico Crippa of Alba's Piazza Duomo restaurant came up with the recipe for this cake, inspired by the tradition and goodness of PGI Piedmont hazelnuts. Only the highest quality ingredients are used for the dough of this refined, soft and delicious cake, which requires no flour at all. A specialty to be enjoyed on its own or together with Moscato zabaglione or lightly whipped cream.
