Cardoncelli are mushrooms typical of several regions in central and southern Italy, prized for their rich but delicate taste and meaty texture that remains that way even after cooking. A real delicacy: the fresh mushroom can be eaten raw, or trifoliated or roasted, and is great for cooking a fragrant risotto. Masseria Mirogallo grows them on its land and offers them in different recipes: Cardoncelli in Extra Virgin Oil are just blanched with water and vinegar, just like in home recipes, to preserve all their delicate flavor. Excellent as an appetizer and side dish, try them on pizza or bruschetta with fresh or medium-aged cheese.
Masseria Mirogallo is located within the Parco delle Chiese Rupestri in the countryside of Matera: its centuries-old history is linked to the cultivation of typical Lucanian products. In 1998, the laboratory was created to process and preserve what was grown exclusively on the farm's land: a choice linked to the desire to obtain a unique product in terms of flavor and quality, linked to the farming tradition. Masseria Mirogallo thus chooses the best varieties of vegetables, which are processed as soon as they are picked and placed in glass jars covered with good extra virgin olive oil. The company uses only natural preservatives: salt or vinegar. In addition to vegetables in oil, Masseria Mirogallo produces vegetable creams and pates, tomato sauces and gravies, cruschi peppers, jams and marmalades.
