La Termite di Bitetto è una varietà di oliva tipica della Puglia. La sua polpa è consistente e profumata. Viene raccolta a mano quando la maturazione le ragala un colore che varia dal rosa, al rosso intenso, dal giallo al verde. Questa caratteristica viene mantenuta nella conservazione ed è segno della genuinità del prodotto. Ottima con gli aperitivi e in cucina come ingrediente di tante ricette.
The Galantino Oil Mill is near Bisceglie, in the heart of Puglia, a land devoted to the cultivation of olive trees. Its history began in 1926, when Vito Galantino bought a 19th-century mill and converted it into an olive mill. In 1960 the family bought the LA Fenice estate, an expanse of olive trees of the Ogliarola and Coratina varieties, which is the heart of oil production. Frantoio Galantino cultivates the olive trees using modern techniques with total respect for the environment. Harvesting is done by hand plucking during the period of full ripeness, from October 15 to December 31, to ensure maximum polyphenol content and perfect taste. The olives are then washed, crushed with stone grinders and cold centrifuged: the result is an extra virgin of exceptional quality, which has won prestigious awards since 1997. As numerous are the company's certifications, including DOP and Organic.
