Monograno Felicetti identifies a quality product, created from a single variety of wheat, the Matt variety, grown in Puglia from organic farming, selected and milled in a single mill. The semolina is mixed with water from the Latemar peaks, is bronze drawn and slowly dried, using pure mountain air. In fact, this pasta, unique in texture, cooking firmness and taste, is produced at the foot of the Dolomites. Eliche Matt Bio are great with a variety of sauces, thanks to the porosity and shape that picks up and enhances the sauces. Try them with zucchini and salmon or with cherry tomatoes, basil and diced mozzarella.
Valentino Felicetti's challenge in 1908 was to produce pasta among the mountains, taking over a pasta factory in Predazzo in Val di Fiemme. The intuition of processing the best semolina with spring water and drying it in the pure air of the Dolomites proved successful.
