The Senatore Cappelli is a prized variety of durum wheat obtained in the early 1900s by geneticist Nazareno Strampelli: its name honors Marquis Raffaele, who in those years promoted the transformation of agriculture in Puglia. Organic Cappelli semolina combined with water from the Dolomite springs creates a pasa with a rich, luscious, roasted-chestnut, mashed-potato flavor, almost buttery, with a saline note on the finish: inimitable. The Valentino is a chunky spaghetti, with an unusual diameter, perfect for concentrating the flavor and meatiness of Cappelli. It is delicious in every way, with seafood ragout, with mussels and clams, with vegetable sauce, and even with just a drizzle of evo oil.
Valentino Felicetti's challenge in 1908 was to produce pasta among the mountains, taking over a pasta factory in Predazzo in Val di Fiemme. The intuition of processing the best semolina with spring water and drying it in the pure air of the Dolomites proved successful. Over the years, family values linked to tradition, the selection of producers of quality raw materials , and a commitment to the environment have led the company, with its organic productions and its exceptional Monograno line, to great recognition among consumers and restaurateurs.
