The Pappardelle with Hazelnuts from Pastificio Fanelli is one of the flagships of the pasta factory located in Canepina, an ancient village between the Cimini Mountains and Tuscia Viterbese, which offers this specialty made with one of the local delicacies, the Tonda Romana Hazelnut. Pappardelle alle Nocciole, made with durum wheat semolina (11%) and hazelnut flour, are excellent topped with a white meat sauce, with bacon and herbs, with porcini mushrooms, with leeks and vegetables.
