The Neapolitan 'pastiera' is a short pastry cake filled with a mixture of ricotta cheese, sugar, eggs and wheat boiled in milk, covered with 7 strips of the same short pastry intertwined in the shape of a St Andrew's cross. The pastry is crispy while the filling is soft. The colour is a very intense golden yellow. Good all year round but unfailing on the table at Easter.
