The pizzoccheri are an ancient specialty of Valtellina. They are made from a coarse pastry made by processing buckwheat flour mixed with durum wheat semolina and finally cut into short strips. The classic recipe calls for boiling the pasta together with Savoy cabbage or Swiss chard and papate. Once cooked, they are seasoned with melted butter, flavored with garlic, and diced Casera and Bitto cheese. A pass through the oven and the typical Teglio dish is ready to enjoy, with a glass of good Sassella.
In Teglio, in the heart of Valtellina, the Filippini family has for three generations traditionally processed buckwheat, a typical local production for centuries.
