Spaccatella is prepared with tomatoes of the best variety, picked when fully ripe, blanched, partially peeled, coarsely broken and potted with a basil leaf. It is just what you need to make sauces and recipes with the freshness of tomatoes, even out of season. Also great for a tasty bruschetta.

Masseria Mirogallo is located within the Parco delle Chiese Rupestri in the countryside of Matera: its centuries-old history is linked to the cultivation of typical Lucanian products. In 1998, the laboratory was created to process and preserve what was grown exclusively on the farm's land: a choice linked to the desire to obtain a unique product in terms of flavor and quality, linked to the farming tradition. The company uses only natural preservatives: salt or vinegar.
