Fregola is a dry pasta typical of the Sardinian tradition of ancient origins, prepared by patiently working the durum wheat semolina with water inside a terracotta bowl or in an asphodel basket (the canistedda)until you get many irregular balls, more or less small. Once ready, the fregola is sieved, dried or roasted in the oven, to add an aromatic note. Fregola is cooked in boiling water, drained and seasoned to taste, or in the broth (in Sardinia that of sheep) and sprinkled with pecorino cheese. It is also excellent risotto. The typical preparation is with fish, shellfish and seafood, or lamb, but it is excellent with artichokes or peas. Perfect in soups.
